An interesting fragrance note - sorrel (aka rumex) herb, from the buckwheat family. It has an aroma that is comparable to kiwi fruit or wild strawberries, very sour and utilized in soups all over the world.
In "Sorrel and Lemon Thyme", this note is given a decent forum to present itself as part of an orchestrated dance with spicy leathery herb lemon thyme and a bunch of other notable herbs and spices
(i.e. petitgrain, rosemary) and several citrus players (i.e. lemon, "bigarade"
